This isn't a new cookbook, and Penelope Casas has written a few that supplement it, but it ranks alongside James Beard's cookbooks for quality and utility!. I lived in Spain for four years, and came to love the food. This copy of the book was a replacement for the copy that finally fell apart after many years of hard use. Having to discard the old copy was like discarding an old lover! Receipes are easy to follow, ingredients are easy to find. When unique ingredients are needed, Casas gives you enough information to find them- and this was before the Internet which now makes it a breeze, even when living in rural South Carolina! I highly recomment this book for anyone who likes Spanish food or who would like to try it. Just a few recipes, like Fabada Asturiana, Cocido Madrileno and Fideus (Paella with noodles instead of rice) make it worth the cost!

I had a copy and one of my children has it and I wanted another one. Good find and value and in excellent condition.

This book is full of a dynamic range of Spanish recipes, all of which are both tasty and easy to prepare. Every recipe I've made has come out perfect, I have never had a failure. Ms. Casas has clearly gone to great lengths to capture authentic, well tested recipes that anyone can prepare.This book is so diverse in its scope that it would take a long time to tire of using it. I can hardly bare to cook anything else. Spanish flavor with its simplicity and freshness of flavors could not be better presented then in this perfect book. Highly reccomended!

I really love the variety presented in this book. It has tons of recipes for all sorts of skill levels. So if you want to make something elaborate for Spanish night or whatever, this one has you covered, but unlike other ethnic cookbooks, this one also has you covered if you just want to whip something together in a few minutes. I've done a couple of the elaborate recipes and they've all been great, but the really great thing is the number of ten-minute recipes that use between three (!) and five common ingredients, yet still turn out notably Spanish. The funny thing is that before all of simplest recipes, the author often says that it's actually one of her husband's favorite dishes and one that she ends up making most often.Added to that, all the side recommendations and advice that is given about each recipe and ingredients, this is by far the best ethnic cookbook I've ever owned. I can't imagine it being anything other than five stars.

This book is at the same time my favorite Spanish cookbook and the most frustrating. The recipes are terrific. I also have Casas' Delicioso! (which I highly recommend as well), but I prefer this book because it is better organized, with more of the standard Spanish recipes I crave (seafood with green sauce, scallops with sherry sauce, etc.-- fantastic). But with her later books such as Delicioso, Casas (or her editor) has learned to provide clearer, more accurate cooking instructions. In The Foods and Wines of Spain, the instructions are much more vague. How high should the heat be on the stove? How long should you sautee the onions? What does it mean exactly to "dust" something with flour? These things are often not spelled out. I am a pretty experienced cook but I would definitely benefit from some better instructions in some of the recipes. I can see how this book would be confusing for the novice cook or someone fairly new to Spanish cuisine-- if you are in this category you might want to start out with Delicioso!.

I love all of Penelope Casas' books on Spanish cooking and this one is the place to start.

Some cookbook authors go overboard in an attempt to take old traditional recipes and put a modern spin on them. Penelope Casas book instead shows respect for traditional recipes, preparations and flavors in a book that is straightforward, and written in a conversational tone as if one is sitting on a kitchen stool beside her in her kitchen. I really enjoyed it.

I am well pleased with the book . It's just what I expected.
